Ingredients
Scale
Filling
- 1 pound breakfast sausage (pork or turkey)
- 6 large eggs
- 2 tablespoons milk
- Salt and pepper to taste
- 1 tablespoon butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions (optional)
Dough and Topping
- 1 can refrigerated crescent roll dough (8-count)
- 1 tablespoon melted butter (for brushing, optional)
- 1 tablespoon sesame seeds or everything bagel seasoning (optional)
Instructions
- Cook the Sausage: Preheat your oven to 375°F and line a baking sheet with parchment paper. In a skillet over medium heat, cook the breakfast sausage, breaking it up into crumbles until fully browned. Drain any excess grease and set aside.
- Prepare the Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat. Pour in the egg mixture and scramble gently until the eggs are just set but still soft. Remove from heat.
- Assemble the Rolls: Unroll the crescent dough and separate it into 8 triangles. On the wide end of each triangle, place a spoonful of scrambled egg, some cooked sausage, and a generous sprinkle of cheddar cheese. Add chopped green onions if using. Roll each triangle tightly from the wide end to the tip, enclosing all the fillings, and place the rolls on the prepared baking sheet.
- Apply Toppings and Bake: If desired, brush the tops lightly with melted butter for extra richness. Sprinkle the rolls with sesame seeds or everything bagel seasoning to add flavor and texture. Bake in the preheated oven for 12–15 minutes, or until the rolls are golden brown and fully cooked through.
- Serve Warm: Remove the breakfast rolls from the oven and serve immediately for a warm, savory start to your day.
Notes
- You can prepare the sausage and scrambled eggs ahead of time and assemble the rolls fresh in the morning for quick baking.
- For a spicier version, substitute hot breakfast sausage or add diced jalapeños to the filling.
- These breakfast rolls reheat well in the toaster oven or air fryer, making them perfect for meal prep.
