Description

Cajun Shrimp Sweet Potato Bites are a flavorful and vibrant appetizer featuring roasted sweet potato rounds topped with spicy Cajun-seasoned shrimp and a tangy Greek yogurt sauce. This easy-to-make dish balances the natural sweetness of the potatoes with the bold spices of Cajun seasoning, perfect for holiday gatherings or any appetizer spread.

Ingredients

Scale

Sweet Potato Rounds

  • 1 large sweet potato, cut into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Shrimp

  • 20 medium shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon butter

Sauce

  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon hot sauce (optional)

Garnish

  • Chopped fresh parsley

Instructions

  1. Preheat and prepare sweet potatoes: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss the sweet potato rounds with olive oil, salt, and black pepper to coat evenly, then arrange them in a single layer on the prepared baking sheet.
  2. Roast sweet potatoes: Roast the sweet potato rounds in the oven for 20–25 minutes, flipping them halfway through cooking. They should become tender with slightly crispy edges.
  3. Season shrimp: While the sweet potatoes roast, pat the shrimp dry using paper towels and toss them with the Cajun seasoning to ensure they are evenly coated.
  4. Cook shrimp: Heat butter in a skillet over medium heat. Add the seasoned shrimp and cook for 2–3 minutes on each side, until the shrimp turn opaque and are cooked through.
  5. Prepare sauce: In a small bowl, combine the plain Greek yogurt, lemon juice, and hot sauce (if using). Stir well to create a tangy and slightly spicy sauce.
  6. Assemble bites: Once the sweet potato rounds are cooled slightly, top each round with a dollop of the yogurt sauce and place one cooked shrimp on top.
  7. Garnish and serve: Sprinkle chopped fresh parsley over the assembled bites and serve them warm or at room temperature.

Notes

  • You can substitute the Greek yogurt sauce with aioli or sour cream for a different flavor profile.
  • For extra crispy sweet potato rounds, broil them for 2–3 minutes at the end of the roasting time.
  • Ensure shrimp are fully cooked before assembling to avoid undercooked seafood.
  • Adjust the amount of hot sauce in the sauce to match your desired spice level.
