Ingredients
Scale
Chicken Mixture
- 2 cups cooked shredded chicken (rotisserie works great)
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
Garlic Butter
- 2 tablespoons unsalted butter, softened
- 2 garlic cloves, minced
- 1 tablespoon chopped parsley (optional)
Bread and Topping
- 4 large slices of French bread or 2 sandwich rolls sliced lengthwise
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sandwich.
- Mix Chicken Filling: In a medium bowl, combine the shredded chicken with mayonnaise, garlic powder, onion powder, salt, black pepper, and Italian seasoning. Stir in mozzarella and cheddar cheeses until well mixed.
- Prepare Garlic Butter: In a small bowl, mix the softened butter with minced garlic and optional chopped parsley.
- Butter the Bread: Spread the garlic butter mixture evenly onto the cut sides of the French bread or sandwich rolls.
- Bake Bread: Arrange the buttered bread slices buttered-side-up on a baking sheet and bake for 5–6 minutes until slightly crispy and fragrant.
- Add Chicken Mixture: Remove the bread from the oven and spoon the cheesy chicken mixture evenly over each slice.
- Top with Parmesan and Bake: Sprinkle grated Parmesan cheese over the sandwiches and return to the oven for 10–12 minutes until the topping is hot, melted, and bubbly.
- Optional Broil: For extra golden and crispy cheese, broil the sandwiches for 1–2 minutes, watching closely to prevent burning.
- Serve: Slice the sandwiches if needed and serve warm.
Notes
- For extra flavor, add cooked bacon, jalapeños, or tomatoes to the chicken mixture.
- Use Greek yogurt instead of mayo for a lighter version.
- Substitute French bread with sandwich rolls or hoagie buns as preferred.
