For the Chicken Burgers

  • 1 pound ground chicken
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon olive oil

For Serving

  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Red onion slices
  • Condiments of choice (mayo, chipotle mayo, etc.)


Instructions

  1. Mix the Burger Ingredients: In a large bowl, combine the ground chicken, minced chipotle pepper, adobo sauce, garlic powder, onion powder, smoked paprika, salt, black pepper, and shredded sharp cheddar cheese. Mix gently to combine all ingredients without overworking the meat.
  2. Shape the Patties: Divide the mixture evenly into 4 portions and shape each into a burger patty, about 3/4 inch thick.
  3. Preheat the Cooking Surface: Heat olive oil in a large skillet or grill pan over medium heat until hot but not smoking.
  4. Cook the Burgers: Place the patties on the skillet or grill pan and cook for 5–6 minutes on each side, or until a thermometer inserted into the center reads 165°F and the outside is nicely browned.
  5. Toast the Buns (Optional): While the burgers are cooking, toast the burger buns until lightly golden and crisp, either in a toaster or on the skillet.
  6. Assemble the Burgers: Place each patty on a toasted bun and layer with lettuce, tomato slices, red onion, and your favorite condiments like mayo or chipotle mayo.

Notes

  • For extra smoky heat, add a second chipotle pepper to the meat mixture.
