Instructions

  1. Preheat Oven and Prepare Peaches: Preheat the oven to 350°F (175°C). In a medium saucepan over medium heat, combine the peaches, 1/2 cup granulated sugar, brown sugar, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the peaches release their juices and soften slightly.
  2. Melt Butter in Baking Dish: While the peaches are cooking, place the unsalted butter in a 9×13-inch baking dish and put it in the preheated oven to melt fully.
  3. Mix Batter: In a mixing bowl, whisk together the flour, remaining 1/2 cup granulated sugar, baking powder, salt, milk, and vanilla extract until the batter is smooth and well combined.
  4. Assemble Cobbler: Once the butter has melted in the baking dish, carefully remove the dish from the oven. Pour the batter evenly over the melted butter without stirring. Then spoon the warm peach mixture, including the juices, evenly over the batter, again without stirring.
  5. Add Spices: Sprinkle the top of the assembled cobbler with ground cinnamon and nutmeg (if using) to add warm, aromatic flavors.
