Instructions

  1. Prepare the Spicy Mayo: In a small bowl, whisk together mayonnaise, sriracha or hot sauce, lime juice, and garlic powder until smooth. Adjust the heat level according to your taste preference. Refrigerate the sauce until ready to serve.
  2. Heat the Oil: Pour about 2 inches of vegetable oil into a deep skillet or pot and heat over medium-high heat until it reaches 350°F (175°C). Use a candy or deep-fry thermometer to monitor the temperature for best results.
  3. Make the Batter: In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and paprika. Gradually add the cold sparkling water while stirring to form a smooth batter with no lumps.
  4. Prepare for Breading: Place the panko breadcrumbs in a separate shallow bowl. This will be used to coat the battered onion rings for extra crunch.
  5. Bread the Onion Rings: Dip each onion ring into the batter, allowing any excess batter to drip off. Then coat the ring evenly in panko breadcrumbs, pressing gently to ensure the crumbs adhere well.
