Description

A delicious and elegant Garlic Butter Shrimp Stack featuring succulent shrimp sautéed in garlic butter, layered with fluffy jasmine rice, ripe avocado, and fresh vegetables. Perfect for a quick, flavorful main course that combines bright citrus notes with rich buttery goodness.

Ingredients

Scale

Shrimp and Sauce

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Stack Components

  • 2 cups cooked jasmine or basmati rice
  • 1 ripe avocado, sliced
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomato
  • 1 tablespoon chopped fresh parsley or cilantro
  • Lemon wedges for serving (optional)

Instructions

  1. Prepare the garlic butter shrimp: In a large skillet over medium heat, melt the butter together with olive oil. Add the minced garlic and sauté for 30 seconds until fragrant, taking care not to burn it. Add the shrimp along with paprika, salt, and black pepper. Cook the shrimp for 2 to 3 minutes per side, or until they turn pink and opaque. Squeeze lemon juice over the shrimp and toss gently to coat. Remove the skillet from heat and set aside.
  2. Assemble the shrimp stacks: Using a food ring mold or layering freehand, start by adding a layer of cooked jasmine or basmati rice as the base. Next, add a layer of avocado slices, followed by diced cucumber and diced tomato. Top the stack with a generous portion of the garlic butter shrimp. Press gently to keep the layers intact. If using a ring mold, carefully remove it to reveal the stack.
  3. Garnish and serve: Sprinkle freshly chopped parsley or cilantro over the stacks for a fresh herbal finish. Serve warm and optionally with lemon wedges on the side for an extra citrusy touch. This dish is ideal for an elegant dinner or a flavorful weeknight meal.

Notes

  • For added brightness, mix some lemon zest into the cooked rice before assembling the stacks.
  • Enhance richness by drizzling a light garlic aioli or sriracha mayo over the finished stacks.
  • This recipe is perfect for dinner parties or an elevated everyday dinner.
