Ingredients
Scale
Marinade Ingredients
- ¼ cup olive oil
- ½ cup plain Greek yogurt
- Zest of 1 lemon
- Juice of 3 lemons
- 5 cloves garlic, minced or pressed
- 2 tablespoons dried oregano
- 1 teaspoon coriander
- 1 teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
Main Ingredient
- 2 lbs. chicken breast
Instructions
- Prepare the marinade: In a large mixing bowl, whisk together olive oil, Greek yogurt, lemon zest, lemon juice, garlic, oregano, coriander, onion powder, salt, and black pepper until fully combined.
- Marinate the chicken: Add the chicken breasts to the bowl and coat them evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours to allow flavors to infuse.
- Bring chicken to room temperature: About 30 minutes before cooking, remove the chicken from the refrigerator so it can come to room temperature for even cooking.
- Preheat and prepare pan: Preheat your oven to 400°F. Lightly oil a grill pan and heat it over medium-high heat on the stovetop until hot.
- Sear the chicken: Place the marinated chicken breasts on the grill pan and sear on one side for 5 minutes to develop a nice crust. Flip the chicken breasts over.
- Bake to finish cooking: Transfer the grill pan (with the chicken) to the preheated oven and bake for 15 minutes, or until the internal temperature reaches 165°F, indicating the chicken is fully cooked and juicy.
- Rest and serve: Remove the chicken from the oven and let it rest for 5 minutes before serving to allow the juices to redistribute.
Notes
- Marinating for longer enhances flavor and tenderness—up to 24 hours is best.
- Bringing chicken to room temperature before cooking promotes even cooking.
- Use a meat thermometer to ensure chicken is cooked safely to 165°F.
- For added smoky flavor, consider finishing the chicken on a grill instead of the oven.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
