Ingredients
Scale
For the Chicken:
- 1 ½ lbs boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon hot sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Hot Honey Glaze:
- â…“ cup honey
- 1–2 tablespoons hot sauce (adjust to taste)
- 1 teaspoon lime juice
For the Lime Corn Salad:
- 2 cups fresh or frozen corn (grilled or charred)
- 1 cup cherry tomatoes (halved)
- ¼ cup red onion (finely diced)
- 1 avocado (diced)
- 2 tablespoons fresh cilantro (chopped)
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a large bowl, whisk together olive oil, apple cider vinegar, hot sauce, smoked paprika, garlic powder, salt, and pepper. Add the chicken and toss to coat thoroughly. Cover and let it marinate for at least 30 minutes, or up to 8 hours for deeper flavor.
- Preheat the Grill: Preheat your grill or grill pan over medium-high heat to ensure a nice sear and even cooking.
- Grill the Chicken: Place the marinated chicken on the grill and cook for 5 to 6 minutes per side, or until the chicken is fully cooked through and has a nice char.
- Prepare the Hot Honey Glaze: While the chicken cooks, combine honey, hot sauce, and lime juice in a small saucepan over low heat. Stir gently until the mixture is warm and slightly thinned, about 2 to 3 minutes.
- Glaze the Chicken: Brush the hot honey glaze over the grilled chicken during the last minute of cooking, allowing the glaze to caramelize slightly. Then remove the chicken from the grill.
- Make the Lime Corn Salad: In a medium bowl, combine grilled or charred corn, halved cherry tomatoes, diced red onion, diced avocado, chopped cilantro, and lime juice. Toss gently to mix and season with salt and pepper to taste.
- Serve: Plate the grilled hot honey chicken alongside a generous serving of lime corn salad for a refreshing and flavorful meal.
Notes
- If you don’t have a grill, you can char the corn and cook the chicken in a skillet or grill pan on the stovetop.
- For an extra spicy glaze, add a pinch of chili flakes to the hot honey mixture while warming it.
- This dish pairs beautifully with rice, grilled flatbread, or a simple green salad.
