Instructions

- Boil and Remove from Heat: Once boiling, allow the mixture to boil for exactly 1 full minute without stirring. Then remove the saucepan from heat and stir in the vanilla extract.
- Add Oats and Coconut: Immediately add the quick-cooking oats and shredded coconut to the hot mixture. Stir thoroughly until all ingredients are well combined.
- Shape Cookies: Drop spoonfuls of the mixture onto a baking sheet lined with parchment or wax paper. Flatten each cookie slightly if desired for a more even shape.
