Instructions

  3. Smash the potatoes: Transfer the boiled potatoes to the baking sheet. Using the bottom of a glass or measuring cup, gently press down each potato until it is about 1/2-inch thick, being careful not to completely mash them.
  4. Season and cheese: Drizzle the smashed potatoes evenly with olive oil. Sprinkle garlic powder, salt, and black pepper over them, then generously top with grated Parmesan cheese to ensure a crispy, flavorful crust.
  5. Bake the potatoes: Place the baking sheet in the oven and bake for 20–25 minutes until the potato edges turn crispy and golden brown.
  6. Prepare the garlic dip: While the potatoes bake, combine sour cream or Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix well, then refrigerate until serving.
