- ½ cup sour cream
- 1 cup mozzarella cheese (shredded)
- 8 slices provolone cheese (chopped into ¼ inch pieces or substitute with 1 cup shredded mozzarella or Swiss cheese)

- ½ tsp black pepper (or to taste)
- Fresh parsley (finely chopped, for garnish)

Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Grease an oven-safe baking dish or skillet with cooking spray and set it aside for later use.
- Sauté Vegetables: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for 4-5 minutes until lightly caramelized. Then add the chopped green bell pepper and continue cooking for another 2-3 minutes until the peppers are tender. Stir occasionally to ensure even cooking.
- Mix Cheese Base: While the vegetables cook, combine the softened cream cheese, sour cream, shredded mozzarella, and chopped provolone cheese in a medium-sized bowl. Stir the mixture until it is smooth and well blended.
- Add Meat and Veggies: To the cheese mixture, add the chopped roast beef, sautéed onions and peppers, salt, and black pepper. Stir thoroughly to evenly distribute all ingredients. Optionally, you can reserve 1 tablespoon of the roast beef and vegetables for garnish.
- Assemble the Dip: Spread the combined dip evenly into the prepared baking dish or skillet. If you reserved the garnish, distribute it evenly on top of the dip for a decorative touch.
- Bake: Cover the dish with foil and bake in the preheated oven for 15 to 18 minutes until the dip is hot and bubbly. Remove the foil and continue baking uncovered for an additional 2 to 3 minutes to lightly brown the top.
