Instructions
- Prepare the Oven and Baking Sheet: Place your oven rack in the middle position and preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper and set it aside.
- Roll Out Puff Pastry: Thaw the puff pastry sheet according to package instructions. Roll the thawed pastry into a 10×10 inch square. Carefully transfer the rolled pastry to the prepared baking sheet.
- Create a Border: Fold one edge of the puff pastry over by ½ inch, then fold it again by another ½ inch to form a tight border. Repeat this folding process on all sides to create a raised edge that will hold the filling.
- Add Eggs and Seal Border: Crack the eggs directly onto the puff pastry, spreading them evenly within the border. Use a pastry brush dipped in the egg whites from the cracked eggs to brush over the folded edges to seal all corners securely.
- Season and Add Toppings: Season the eggs with salt and pepper to taste. Sprinkle the shredded Colby-Jack cheese evenly over the eggs, then distribute the diced cooked bacon pieces on top of the cheese.
- Bake the Tart: Place the baking sheet in the preheated oven and bake for about 18 minutes until the pastry edges are golden brown and puffed up, and the eggs are just set.
