- Prepare Base: Place the quartered onion and smashed garlic cloves at the bottom of the slow cooker to build a flavorful base for the corned beef.
- Layer Corned Beef: Rinse the corned beef brisket under cold water, pat it dry, and place it fat side up on top of the onions in the slow cooker. Sprinkle the included spice packet evenly over the beef to season it.
- Mix Liquid: In a small bowl, whisk together the low-sodium beef broth, water, whole grain mustard, and brown sugar until combined. Pour this mixture over the corned beef in the slow cooker, ensuring the meat is well covered.
- Slow Cook: Cover the slow cooker and cook on the low setting for 8 to 9 hours, or until the corned beef is tender and easy to shred.
