Description

A hearty and comforting Slow Cooker Cowboy Casserole featuring ground beef, potatoes, beans, corn, and cheese, slowly cooked to perfection for a satisfying meal that’s easy to prepare and perfect for busy days.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 cup frozen corn

Canned Goods

  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can diced tomatoes with juices

Liquids and Broth

  • 1 cup beef broth

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Dairy

  • 2 cups shredded cheddar cheese
  • Sour cream for serving (optional)

Instructions

  1. Brown the Ground Beef and Sauté Aromatics: In a large skillet over medium heat, cook the ground beef until fully browned. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds. Drain any excess grease from the skillet.
  2. Combine Ingredients in Slow Cooker: Transfer the beef mixture to the slow cooker. Add the diced potatoes, drained kidney beans, diced tomatoes with their juices, frozen corn, and beef broth.
  3. Add Seasonings and Stir: Sprinkle in the chili powder, paprika, salt, and black pepper. Stir thoroughly to evenly distribute the seasonings throughout the mixture.
  4. Cook Slowly: Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the potatoes are fork tender and all ingredients are cooked through.
  5. Add Cheese and Finish Cooking: Sprinkle shredded cheddar cheese evenly over the top of the casserole. Cover again and cook for another 10 to 15 minutes until the cheese has melted completely.
  6. Serve: Serve the casserole hot. Optionally, garnish with sour cream for added creaminess and flavor.

Notes

  • For a richer flavor, use homemade beef broth instead of store-bought.
  • Feel free to substitute ground turkey or chicken for a leaner option.
  • Adjust chili powder and paprika according to your spice preference.
  • Sour cream topping is optional but adds a nice creaminess to the dish.
  • Leftovers can be refrigerated for up to 3 days and reheated in the microwave or stovetop.
