Spicy Garlic Sesame Sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon sriracha or chili garlic sauce (adjust to taste)
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
  2. Prepare the Fries: Toss the thinly cut russet potatoes with vegetable oil and a pinch of salt until well-coated. Spread them out in a single layer on the prepared baking sheet to promote crispiness.
  3. Bake the Fries: Place the baking sheet in the oven and bake for 30–35 minutes, flipping the fries halfway through the cooking time to ensure they become golden and crispy on all sides.
  4. Make the Spicy Garlic Sesame Sauce: While the fries bake, combine sesame oil, soy sauce, minced garlic, sriracha, rice vinegar, and sugar in a small saucepan. Heat over low heat for 2–3 minutes, stirring occasionally, until the sauce is fragrant and slightly thickened.
  5. Toss Fries in Sauce: When the fries are done, transfer them to a large bowl. Pour the warm spicy garlic sesame sauce over the fries, tossing gently to coat every fry evenly.
