- 1 tablespoon sriracha or chili garlic sauce (adjust to taste)
- 1 teaspoon rice vinegar
- 1 teaspoon sugar

Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
- Prepare the Fries: Toss the thinly cut russet potatoes with vegetable oil and a pinch of salt until well-coated. Spread them out in a single layer on the prepared baking sheet to promote crispiness.
- Bake the Fries: Place the baking sheet in the oven and bake for 30–35 minutes, flipping the fries halfway through the cooking time to ensure they become golden and crispy on all sides.
- Make the Spicy Garlic Sesame Sauce: While the fries bake, combine sesame oil, soy sauce, minced garlic, sriracha, rice vinegar, and sugar in a small saucepan. Heat over low heat for 2–3 minutes, stirring occasionally, until the sauce is fragrant and slightly thickened.
- Toss Fries in Sauce: When the fries are done, transfer them to a large bowl. Pour the warm spicy garlic sesame sauce over the fries, tossing gently to coat every fry evenly.
- Add Toppings and Serve: Sprinkle the coated fries with sesame seeds and thinly sliced green onions. Serve immediately while hot and crispy.
