  • 4 cups fresh watermelon, cubed
  • 1 tablespoon lemon juice

Instructions

  1. Blend Watermelon: Place the fresh watermelon cubes in a blender and blend until completely smooth to release all the juice and flavor.
  2. Strain Juice: Pour the blended watermelon through a fine mesh sieve or cheesecloth into a saucepan to remove pulp and seeds, leaving a clear juice for simmering.
  3. Add Ingredients and Simmer: Stir in the lemon juice and, if desired, sugar or honey to the watermelon juice. Place the saucepan over medium-low heat and bring to a gentle simmer.
  4. Reduce to Syrup: Simmer gently for 45 to 60 minutes, stirring occasionally to prevent sticking. Continue until the liquid thickens to a syrup-like consistency that coats the back of a spoon.
  5. Cool and Store: Remove the saucepan from heat and allow the syrup to cool completely, during which it will thicken further. Transfer the watermelon honey to a clean jar and refrigerate for up to two weeks.
