- 1/4 cup (60 g) wholemeal self-raising flour
- 2 tablespoons fresh herbs of choice (such as parsley, dill, or chives)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Blend Edamame and Eggs: Add defrosted edamame and eggs to a high-speed blender or small food processor and blend until mostly smooth but still slightly chunky to maintain texture.
- Prepare Zucchini: Grate the zucchini finely, then wrap it in a clean tea towel and squeeze out as much moisture as possible to avoid soggy fritters. Transfer grated zucchini to a large mixing bowl.
- Mix Ingredients: Add the edamame mixture to the bowl with the zucchini. Stir in the ricotta cheese, wholemeal self-raising flour, fresh herbs, garlic powder, and salt until the batter is well combined.
- Cook the Fritters: Heat a non-stick skillet over medium heat and lightly spray with oil. Scoop tablespoon-sized portions of batter into the pan, flatten slightly with a spatula, and cook for 1–2 minutes on each side until the fritters are golden brown and cooked through.
