Ingredients
Scale
Vegetables
- 2 medium zucchinis, sliced into 1/4-inch rounds
Seasonings
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Toppings
- 1/3 cup marinara or pizza sauce
- 1/2 cup shredded mozzarella cheese
- 12–15 mini pepperoni slices or chopped toppings of choice
- Fresh basil or red pepper flakes for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Zucchini Slices: Arrange the zucchini slices in a single layer on the prepared baking sheet. Brush each slice lightly with olive oil to help them roast evenly and develop flavor.
- Season: Sprinkle the zucchini rounds with Italian seasoning, garlic powder, salt, and pepper to taste, enhancing their natural flavor.
- Initial Roasting: Roast the seasoned zucchini slices in the oven for 5 minutes to soften them slightly and begin the cooking process.
- Add Toppings: Remove the zucchini from the oven. Spoon a small amount of marinara sauce onto each slice, then add a pinch of shredded mozzarella cheese followed by a mini pepperoni slice or your choice of toppings.
- Final Bake: Return the baking sheet to the oven and bake for an additional 5–7 minutes, until the cheese melts and becomes bubbly, creating that classic pizza texture.
- Garnish and Serve: Optionally, garnish with fresh basil leaves or sprinkle red pepper flakes for extra flavor and a touch of heat. Serve the zucchini pizza bites warm for the best taste and texture.
